I was watching a video on Youtube & someone rebuilt the Victorinox Officer'sknife from approx 1920.
If I was bored enough to try, is it possible to do the same with a Spartan with stainless steel bushings/torx screws and G10 scales?
Exposed rivets/screws look better to me.
 
It is certainly possible. A drill press makes disassembly easier. A lot of experience taking things apart and putting them back together helps, too. Finding hardware small enough to use the original holes may be difficult, so cobalt drill bits for drilling through hardened steel are a must.
 
Parts are available just search for "Victorinox pins" to get you started. Several sources out there. Edited to add that some sites call them rivets.

My gf just told me since I don't seem to know left from right, & she doesn't want to spend the night in the ER she is vetoing my "boredom project".
The quad thinks I should do it so she can watch me get my head sewn back on.
 
I say give it a go. Take your time and be careful and it should go well.
