I see a lot of people that just sharpen radially around the high centerline. Them axes won't cut.

Ditto this. And I change the edge bevel angle as I approach the heel and toe, leaving it thicker there for extra support.
 
I think it's standard procedure. I see a lot of people that just sharpen radially around the high centerline. Them axes won't cut. A common mistake is to think that filing down the high centerline will nullify it's effect. It won't. It allows deeper penetration before it comes into play. That's just altering for the intended use.

Well, since it's thicker in the middle than at the toe and heel, to achieve a thinner taper the middle will be filed further than the toe and heel. It's easy to picture when you think of a "banana" grind and how it looks.

I go beyond that and make the heel and toe a slightly wider bevel. You give up a little bit of penetration in exchange for durability. It's a personal choice.
 
Yeah--I was just giving a further description of the concept. Lots of ways to run an edge, and many get confused by changes in the visual bevel width! :)
