Recommend a maker for a custom kitchen knife

I am about to talk myself into getting a custom kitchen knife. Any recomendations for style or maker?
 
i would just get one of Murray Carters knives. You can spend as little or as much as you would like on a kitchen knife. No one is gonna make you a better one.
 
I placed an order with Murray Carter at the Blade Show. The knives he had on his table at the Blade Show were very nice, but not exactly what I wanted. Anyway, here's what I ordered:
Stainless Fukugo-zai Series
Wabocho (5.3 sun or 6.5")
Funayuki-bocho (4.9 sun or 6")

They are scheduled to ship next week.

:D I also ordered a hand forged neck knife w/mammoth ivory handle :D
 
Yep...Can't go wrong with a Murray Carter. They're way sharp, so watch your fingers if you buy one.

David Boye also specializes in custom kitchen knives of Dendritic steel, which is cast 440-C. It has cutting properties similar to Talonite or Stellite.

I'll second George Tichbourne. Traditional style knives at a reasonable price.

While I don't personally own a piece of Murray Carter's work, I certainly would not hesitate to buy one if I found a need to fill a hole in my collection.

Anyone have a website for Murray Carter or a current email address?

There are some great knives out there for the kitchen. But I wholly agree with the recommendation of George Tichbourne, Thomas Haslinger and Murray Carter. You'll be happy with any of them.

In terms of knife style, I am a big fan of Japanese style kitchen knives. Depending on how many custom kitchen blades you are looking at getting, I think a good basic set would be a deba (for heavy duty citting), a santoku (for general slicing and chopping) and a nakiri (for slicing vegetables etc.). I have a Murray Carter deba and nakiri and am very pleased with them both. If the Japanese style knives don't float your boat you could get by with a custom Western-style chef's knife of an appropriate length.

Are there any sources for highend custom knifes made by traditional smiths in Japan?

I have come across one nice looking knife on a german webside
www.manufactum.de (can't provide a direct link but you can find it in the kitchen section). It is a damscus santoko and sells for about $500.

Any other sides that I should look at?

A little of topic but, along the lines of the current trend towards Japanese blades, how about U.S.A. based retailers or distributors of the high end Japanese blades? Got any links or phone numbers?

People think highly of Trace Rinaldi's TTKK - some dude with a cooking TV show uses them.
 
Phil Wilson makes kitchen knives in addition to his notable filet and hunting knives. His attention to heat treat detail is as good as any. I have one semi-skinner and it's a beaut. Would buy from Phil again, for sure. He'll do 154CM and do it right ... or S30V, 420V if you wish to afford it.

Alas, I don't think he has a web site.
