Recommend me a fixed blade for poultry...

Hi,

I am looking to purchase a fixed blade knife, preferably custom made, to be used as an all purpose knife for dressing poultry and rabbit.

The amount of dough that I am willing to spend on this is somewhere between $180-350. I wouldn't mind getting a production knife for less or around $200, as long as it would serve my purposes.

Blade length should be a minimum of 4 inches.

Maximum length of knife at 9 inches.

I'd like to get a knife with an easy to sharpen blade and a handle that is non-slip/easy to grip.

Why not to check Bark River knives? Aurora or Fox River comes to mind. You can get either one for well under $180.
 
If I were to need a custom for your purpose. I would have a maker do a modern version of the classic Bird and Trout. Which has been used for fowl and small game for generations.

I would use the same blade profile,a must. Same general handle shape only full tang with a "modern" scale material like micarta.

Made from good old 1095 carbon or O1 with a flat grind it would be easy to sharpen and maintain.

Generally smaller than your specs, but since it would be a "custom design" stretching it out a bit would not be a problem.

In my opinion a modernised version of this vintage Robeson would suit your needs.

I see your point and I thank you very much for your invaluable input. You are absolutely right, I think I need something custom made along the lines of your "Robeson" knife description. I don't know where to start or even who could undertake such a custom work for me.

You could try some of the fine custom makers here on this board. JK handmade knives (stomper) uses O1 or 1095 for his knives. And will create ,"your design or mine".

I can't vouch for his work personally yet, but I have ordered from him and will see very soon how good his work is.

And if it would help,I would be willing to loan him my Robeson for a blade model, width,grind, depth,...etc.

The handle part would be up to you though.:)

This appears to be based on old style boning knives.
A little tip, a little belly, some guard, and an outstanding maker.

D2 steel is an excellent cutter on meat proteins. :thumbup:

I have one of Charles knives and have handled a few. Very nice.

A fellow member had one for sale a while ago...
 
I think your specs might be a bit large for poultry&particularly rabbit...Bark River have a good range and I'd say their Classic Lite Hunter or Escort could be possibles,both stainless both very practical.

I am a little bit confused as many custom made bird and trout knives come with blades around 3 inches, while there are some with blades at least 4 inches or even more. I'd like to get a knife that would be big/good enough to cut open a fairly large hen or a rooster in half... and I am not even sure if a smaller blade knife would be up to the task.
