Recommend me a Japanese olive wood handle knife

Hi all.

Looking to buy my first Japanese knife. I'd like a olive handle so it matches cheese and meat boards used for entertaining.

I currently have some Henkel twin knives.

Olive wood is strictly European. Better off with one of the dark hardwoods native to japan, or honoki or white oak, both of which are traditional cutlery handle woods.

I found a messermeister and a boker with olive handles. what should I look for other than looks?

I was just listing off some makers because the OP seems a bit green to Japanese knives. If dead set on olive wood then it's probably going to happen through a custom handle maker. Most come with cheap Ho wood handles but with nice blades, they make good candidates for a rehandle.
 
FYI, Opinel only sells their olive wood handles with stainless blades, because the olive wood is a little corrosive. Many Japanese blades are made of non-stainless steel, and may be poor candidates for re-handling in olive wood.

But olive trees never made the trip to Asia, apparently. No olives in the food, no olive oil, no olive wood.

Ok. Thanks for the info. Seems the selection for me is limited. Maybe I will just go with a Japanese knife and find a board.
