About the only steel you will find that is as rust resistant as N680 is going to be H1.

They have a gun digest commemorative Loveless style drop point hunter by Bark River, after discount it is $72
has a 3.5" blade, I would think that would be good for white tail & at $72 for a Bark River it is really tempting

I was going to suggest KOA, I own 3: the Yukon, the Alpha Wolf and the Bear Cub all on D2 steel, came sharp out of the box, all I do is strop after use. They are no nonsense task specific utility blades for hunting. (caping, butchering, skinning)
Some are available on S30V steel at a higher price and other in different handles options. They are made in Texas USA and the Knives of Alaska provides great customer service. The only thing is not so great is some of their sheaths made of good leather but a bit strange design if you ask me.
