My Mom likes to carry a knife for food prep on the go. This usually consists of primarily cutting fruit. She currently has a Spyderco Byrd meadowlark 2. However, the problem with a folding knife for her is that she constantly gets the knife dirty to the point where it is incredibly difficult to open (she doesn't really have the time to constantly take it apart and clean it). So, I am loioking to get her a fixed blade knife. What are good fixed blade knives to carry around for food prep. It would need to have a good way to carry it in a bag and be less than 3.5 inches. It would be nice to find something under $45. Doesn't need to be a particularly nice steel, just would need it not to be prone to rust.
 
Maybe a CRKT Spew?
Cold Steel Pendleton hunter or bird and game?

get her a stainless opinel knife. They are so thin they cut even when the edge is dull. Also the mechanism is simple.
 
Have a look on A G Russell's web site at some of his small AGR branded fixed blades. The Hunter's Scalpel might be just what you want.
 
Tons of stainless paring knives that come with plastic sheaths available at the kitchen stores. Kuhn Rikon Colori Plus and KAI Pure Komachi 2, are a couple of examples. They come in many shapes, colors and sizes. I have some of the similar KAI knives made for a particular kitchen retailer that are similar to the Pure Komachi line.

They work just fine. They are a rather soft steel so will dull pretty quick if used directly on a ceramic plate, for example, but they are easy to sharpen and they respond well to a honing steel. If you cut on a softer surface like a cutting board or improvised softer surface (folded up paper towels, for example) they maintain their edge pretty well. Like any knife, you have to use it right.
 
I second the recommendation of the the Opinel. I use one daily to slice apples. Couldn't be a better travel knife for the purposes you stated.
