Recovering from Red Kidney Bean Poisoning!

Mods, not trying to make work for you, but I think a sticky on various issues people have had with food preparation would really help. Maybe excerpts or whole posts.

Good to know, with winter coming on, there are many dishes my family and circle of friends use kidney beans for.
 
Wow that sucks brother. Never had kidney bean poisoning myself that I know of, but it doesn't sound fun. Glad you're feeling better.
 
With all the wild edibles — and not so edibles — that members come up with, a sticky like that could be a life saver... literally.
 
around here it's almost always pintos and I've never had any problems, hmm guess if I decide to add kidney beans to the pantry I'm going to have to write BOIL ME on the package.
 
I never knew about the toxins, I just knew that if you didn't cook them well, boiling them, they tasted like crap. I'm sorry you had to suffer through that and glad the lady didn't eat any at all. :)
 
That's wild. Sorry to hear that you got sick. As a child I saw my mother do this over and over, and never realized the significance in boiling the beans. On the plus side, I need to lose about ten lbs. and I may have just found my methodology...the nasty toxic bean diet.
 
Wow, I cook dry beans all the time, I like them better than canned especially with a good smoked ham hock in them. Years ago my grandmother taught me to soak a while, par-boil, drain, soak, and then boil a while and then simmer/low-boil to taste. I guess I'm just lucky I've always followed her teachings...never knew of a safety reason at all.

my mom taught me the quick boil method mentioned (we eat lots of black eyed peas). i never knew beans could be that toxic!
 
Roger that :thumbup: Heck, even plain old bacon works well. If you have bacon or salt pork, some onions, some garlic, a few herbs and spices and a little imagination, you can make some truly tasty meals on the cheap.

Looking back I'm sure she did...wouldn't have hurt if she shared that knowledge though jeeeeez. I'm glad I always just followed the given instructions.

Yeah. Mine, being Scots, never said a thing about beans. It was always "Bobby, eat your oatmeal, and be quiet." I mean, how does "Eat your oatmeal" prepare a lad for life in Southern California? I had to learn about beans all by myself.

Yeah, mine too. I've been thinking about it all day, and tomorrow I think the menu will be red beans and rice, New Orleans style, with some smoked sausage. Comfort food, as they say.
 
I think I'm going to try to re-create my Grandfathers recipe, which is pretty much the first one you mentioned. Slow cooked in the Crockpot.

Cool. I love slow cooked food that takes all day. The one thing I would mention is that, with red beans, you really do need to get them up to a boil for at least a few minutes to kill the toxin. It's not the length of time at boiling temperature that does the trick, it's the temperature itself. Getting the beans to boiling temperature for only a little while won't actually cook the beans, it only kills the nasties. Once you've boiled them for a few minutes, you can put them in the Crockpot and let them go all day, along with the other ingredients.
