This is an experimental design. A tall Santoku, with left handed D handle configuration of Ironwood with ebony, and left handed hollow grind on the lower blade for food release.
The general blade grind is full flat on both sides, with the hollow set into that on the left.
This one has a little patina forming already from being washed.
It has no edge on it yet, but will be water stone sharpened to 5000 grit if that is your preference.
The others I have made in this style took a wickedly sharp edge.
Handle is sanded to 1000 grit with a rubbed beeswax food grade oil based conditioner.
Steel: 52100 at 63 hardness.
Blade length: 122 mm (4.8 in)
Blade height at spine: 60 mm (2.37 in)
Blade thickness at spine: 2.75 mm (.108 in).
Edge thickness: .12 mm (.0045 in)
Handle length: 137 mm (5.4 in).
