I've been sharpening knives professionally for many years, studied behind master finishers and craftsmen in Japan. One of the marvelous resources they had were old, handwritten accounts of each steele they've worked on, what forge it had come from, and it's characteristics.

Since coming back to the US, I find people asking technical questions about steeles I have trouble answering. Is there a reference book or compendium to the world of steeles, the compositions of those steeles, and the overall characteristics as it pertains to mettalurgy in knife making/smithing?
 
I think the most comprehensive guide is The Heat Treater's Guide, by the ASM. It explains basic metallurgy, the meaning of many terms, and has all the data you would want. That plus the sites The Count gave should cover most any situation.
