Do you need to protect carbon steel under removable scales from rust or anything like that? My first thought is no, because I kind of feel like people make out rust to be a larger problem than it really is. But, I'm not sure if moisture would get trapped under something like G10 if everything is as flat as possible. Can anyone recommend a good video tutorial for making removable scales?

Part of the appeal of removable scales is that you have the ability to take off the scales in order to clean and dry the tang if necessary. I'll be watching with interest to see the methods for making removable handles.

It really depends on how the knife is used and stored, but moisture does tend to find a way more often than not.
I'll normally coat everything in oil before putting the scales on, but something like Vaseline or Cosmoline may also be a good option. That said, it's not a bad idea to take the scale off and re-coat every once in a while.

BTW, I don't have a tutorial, but I normally use posts/pivots and screws. Just drill the tang for the post diameter, and then counter bore the underside of the scale for the post, and the top side for the screw, making sure to leave enough of a web in between for strength. If the tang is relatively thick you can bypass the posts and just tap the tang.

In my opinion remowable scales are for Stainless steel only.
And with protective solid coating.
