what is the easiest and safest way to remove color from anodized titanium?

have you tried it?

It's an extremely thin oxide layer on the surface only. Easiest method to remove it would likely be mechanical, a light abrasive blasting easily removes titanium oxides.

but what if there is a pattern underneath? I've seen pictures of some knives with that.

NO idea what would happen there, honestly. It is most likely going to depend on how the pattern is put on to begin with and how deeply it is cut in.
