Removing the powder coat from a BRKT Bravo Necker

It's 12C27. I was going to use gel paint remover. Even though it's stainless is their any chance of discoloring the metal?

I removed the powder coat with paint stripper and it worked fine. Boy does powder coat cover a lot of imperfections!

Are you seeing the waterjet marks around the periperhery of the knife? I'd rather expect to see that, especially inside the grip skeletonization.
 
Sorry wish I could, after a lot of polishing it's all smooth and shiny now.
