Rennaisance Wax vs Mineral Oil

Well, waxing under the scales would eliminate any worry of rust under the scales, and wouldn't wear off there. So there's that to consider. I'd say it's best to place emphasis on keeping them in a dry environment, though.

Will coating your blades with ren wax prevent carbon steel from developing a nice patina over time?

+1 on Renaissance Wax.

For extra durable/longer storage I like using 1:1 tung oil and orange oil solvent. The solvent helps with penetration and water displacement then evaporates. The tung oil dries hard and won’t come off easily without more solvent, but will leave a visible film - especially if you apply multiple layers. Works great on wooden handles too.

Many of my knives - all folders - have Damascus blades. I put a couple of thin coats of Renn on them and buff with a soft cloth. They look great and don't corrode. I also use Renn wax on wood and mammoth/horn scales.

I use one of those cloths impregnated with oil (for guns) on non-Damascus blades.
