Review: Fallkniven Japanese Chef's Knife

The missing part of the translation is:

"All models have a full tang, some of them even a tapered full tang ..."

This happens to be exactly the model I ordered last week (should be waiting for me in the shop here in Sweden by now). This model wasn't in stock then, but three others were, and handling those was enough for me to decide I wanted it.

If you go to the second or third most expensive district in Tokyo (I didn't find any damascus knives on the street where they specialize in kitchen/restaurant equipment), knifes of about the same class are more expensive than what we have to pay for the Hattoris here in Sweden, so the price didn't deter me much at all.

Still waiting on a US$ price list for those Hattoris, so I can bill Joe for a used knife, and then pay LagaNet!

Cliff,

The spine and part of the drop-blade that your finger rests up against (assume this is what you mean by "forward guard") are not rounded. However, neither are uncomfortable. I used the Hattori exclusively all day today (Thanksgiving), for everything from chopping vegetables to my turkey carving knife, and was never uncomfortable.

Joe, if you have to chop something fairly difficult (relative I know) like thick vegetables, instead of powering on the grip can you push down on the spine without any significant discomfort. I ask this because I was thinking of getting one for my mother and she does this a lot because of problems with her grip.

I would like to purchase one of these knives for my mom for Xmas, but I don't know where to get them... Laganet says they only sell to dealers... =\ Do y'all know of any retail stores in the US I can call up and order it from? I live in California, but I suppose it doesn't really matter. Mail order is mail order...

Thanks. :>

I am also very interested in this knife as well as the other kitchen knife in the line-up. Anyone know where to get one?
