Ritter grip or Spyderco Clay 3

If you have patience, luck and the money, I'd get the Ritter M2 Mini Grip over the Caly3 ZDP (barely). For ordinary production, the Ritter Mini in S30V is a close call with the Caly3 in VG-10. For a beater on a budget, I'd get a standard Mini Grip. Both (in all their variations) are really nice knives and it's hard to think you'd be disappointed either way. I do have to say that the fit and finish on the Caly3 is as nice or nicer than any other production knife you'll find, but you don't cut with those - though they do add to your pleasure of use.
 
I like my CF ZDP Caly3, but my newest spyderco, the SageII also has a 3in blade and fits the hand much, much better.
 
I have both the caly 3 and the full size ritter grip. I also have a regular mini grip 555 and a full size 551. For skinning deer or general survival/camp chores go with the full size ritter. For skinning small game like squirrels or rabbits go with the mini ritter or even the 555 mini grip, though the caly 3 will get the job done. But for edc I'd strongly recommend the caly 3. I have the one in vg10 with G10 scales and it is the nicest knife I own. The G10 scales are warm to the touch and the ergos are perfect. The mini grip is okay for edc but the full size grip is too fat for comfortable edc use IMO.
 
Caly 3 IMO, the ergonomics are excellent. Fits better in my hand than anything else in that size range
 
I own both those knives (ritter mini) and the caly 3 in g-10. For EDC office knife, general public use, I would go with the Caly 3. It has better ergos and is overall less "tactical" to me. It is a great slicer and overall performs very well.

For your task, I would go with the Ritter or Ritter mini. To me, it is more of an all around do everything outdoors type of design. It has the better steel, easier to clean since it is screw construction and has the axis lock.

You can't really go wrong with either, but if I had to choose I would go with the Ritter/mini.
