Rockstead HIGO tell me more

can these knives function at more extreme edge angles? Is there any benefits to those steels and heat treatment beyond edge holding?

and how does the F&F compare to CRK? CRK has very nice F&F but his steel is a bore in comparison.
 
I think hrc is at 67? Most my sushi knives are about 65, and I have some intense thin angles.

Anyone who has used a deba, should understamd this steel, hrc, angle, and polish will cut through many many things without chipping.

debas are japanese chopping knife, usually wedge grind, with convexing near cutting edge, back side is usually hollow ground to prevent sticking, you could cut through car doors easily.
 
The Higo isn't just with aluminum handles. THIS one below with the hardwood scales are the ones that really attracted me (again for when I win the lotto :wink:).

Thanks for the extra pictures! Nice looking knives, I sure would like to hold one before shelling out that kind of money though

As a little FWIW, I have been in contact with the maker regarding left handed versions of their knives.
They are looking into doing this, but it will not be available for at least a year.

Based on that info, I decided to get mine now, and "upgrade" to lefties versions if and when they do offer this.

Interesting. It's been a while since a knife has jumped out at me. A lefty Rockstead might be my next purchase if/when they become available.
