Rockstead HIGO for me.Made by phenomenal tolerances,fit and finish,smooth with excellent blade steel.Simple and easy to maintain with fewer parts.Great materials,design too.
Not cheap but worth every penny IMO.You have to own and use one to appreciate it.

The ones mentioned cost $950-$1200 or so. Ludicrous.

They're not for you, and that's ok. It doesn't make it ridiculous.

Rockstead sucks. They hawk the exchange and cancel the warranty on knives sold here. I get that the warranty states “original owner” only, but that’s some straight up authoritarian bullshit. I’ve owned some of their knives in the past, never again.
