I was always under the impression that the original #9 was 1/8" steel. What is it like with the thicker stainless blade?
An XXL in 3/32" would be really sweet (someday).

The original is 3/32.
The XXL is 1/8. Both are excellent cutters.

I don’t think I would limit it to the #9, lots of my mid size knives work well for food preparation. The smaller ones work well for paring knives.

My RWC is one of my most used in the kitchen. Made quick work of these.
