I've just read that INFI steel is rust resistant. Is that a true statement? If so, by what standard can it be compared too...i.e. stainless, carbon steel, or somewhere in between.

Is the use of a Sentry Solutions Tuff Cloth a good idea, prophylactically? (for the knife blade, that is)

INFI is about as rust resistant as D-2 and ATS-34. Cliff Stamp has done some testing which, I believe, confirms this. On our new and improved website (coming soon to an url near you) we will publish some data which will show INFI's unfriendliness towards rust.

Tuff Cloth is a great idea!

I have done 20 hour soaks in salt water baths with M-INFI, ATS-34, VG-10 and D2. M-INFI took the least amount of edge damage (measured by the amount of work it takes to restore the edge) and penetration (the amount of damage remaining after the surface coat is wiped off). It did not resist surface rusting as strongly, but that comes off easy anyway . I have done light work with my BM in this regard and it seems to behave in a similar manner, and will eventually get around to doing extended soaks with that as well.

Being new here, I may need some educating. I thought that VG10 & ATS34 were stainless steels, and D2 & Infi were carbon? I've read that D2 is probably the most "stainless" of the carbon steels.
Is it my imagination, or are carbon knives easier to sharpen than SS ones, generally speaking? Or does it all depend on the heat treatment and hardness factors?
 
I believe that 13% Chromium is the line at which a steel enters the "Stainless" category. D-2 has approx. 12.5% Chromium. ATS-34 has approx. 13.5%. There are, however, other mitigating circumstances which will determine a steel's "rust aggressiveness".
