OK I've sold a couple of knives. (Actually it's a friend who knows I haven't done this from scratch, but is still willing to pay for materials, plus 
) I'm also gonna make a pair for myself.
He wants a matched 4" paring and 8" carving knives, flat grind. We both want to use S30V.
My question now becomes, what thickness should I order, assuming I have Crucible precision grind the steel?
(Yes I have some practice material and I'm ordering extra S30V!)
