I made this guy to start testing different grinds to achieve better food release. I have sliced a Pork Tenderloin, diced a few onions, sliced several Tomatoes, and sliced a few pounds of potatoes. The Cutting Performance of this knife is Top Notch and the food release is much better than anything else I have tried thus far.
I have cleaned the knife the best I can. There is still some patina visible on the textured flats. This knife will only be available for a couple days before it returns to my kitchen magnet. This is By Far the best kitchen knife I have made to date.
