I've compared the cutting edge of my 2 S90V knives (Millie & Mule) with some of my other knives and i've noticed that on both of them the bevel is kinda higher that it should have been (like in the pic below)

Any ideas why could that be??

Maybe the workers were well aware that the grindability of S90V, well, sucks :D;), and they left more room for error? Just wondering...

They don't look at all unusual to me. In fact, it looks about like the bevel on my knives sharpened at 30 deg. on the Sharpmaker.

I don`t know for sure but I guess the s90v could have a bit shallower edge angle than the M4,from that picture.

It could also be that the edge is left thicker, or just plain sample variation.

Its because its done by hand and no one is perfect, If it was done by a CNC machine it might be a different story. If I had to make a guess at how it was done I would say a 320 grit belt followed by a felt de-burring wheel.

My S90V mule is sharpened the same way. I think its because S90V is a high performance steel and is sharpened from the factory at 30 degrees rather than 40. Just my .02
