Hey guys, I've been void of knife making for a year or so, but would like to try and get my groove back. I would like to try and pump out 7-8 knives for my friends and relatives for x-mas. I was thinking general use type blade similar to a bird and trout design. Most of these will never see the outdoors so do I stick with O1 (my preferred carbon steel) or is there a more cost efficient carbon that is suitable, yet reliable enough, should the knives make it into a survival type situation. I was thinking carbon so I could leave a rustic look similar to this

But I'm not opposed to just sticking with 440c since some will most likely not maintain the carbon as needed.
