My favorite thing about SAKs (and I love SAKs) is they make a model for every body except you!

What I mean is it seems you never get what you want exactly. They really need a custom shop wing on their factory.

An alox model will not have everything you want.
I know these are a little more difficult to mod because of the pins.
The Celluloid handle however, hold up very well, I've never had any issues, they don't feel cheap, and there are several colors to choose from.

However, you could get a celluloid model and had G-10 scales made for it.

As an alternative, you might consider nylon scales. Apart from cosmetics, nylon should hold up as well as, if not better, than Vic's usual cellidor, a "legacy" plastic from an earlier era. It looks great when new, but is susceptible to crazing from contact with some common chemicals, like the DEET found in many sunscreens. Nylon does not, and additionally, the slightly textured surface gives a better grip when wet. It's major drawback is that the trademark Swiss cross is painted on and quickly rubs off with use. This could leave you defenseless in case of vampire attack.
