The Moran and Enuff have plastic handles.

Moran or Enuff Clip point should work well. Unless the hide is really filled with sand/dirt I don't find butchering hard on my knife edges at all. I use customs in S35VN for hunting, but VG10 would work great as well.

Serrata should work great too, seen quite a few deals on them as well.
 
Where is the Spyderco equivalent to these knives? They sell for around $130. The Spyderco Junction would be an awesome hunting knife, but it sells for $180. I'm trying to point out that there is gap in Syperco's lineup that is being filled by other companies.

I was browsing knifecenter and it appears spyderco offers currently, and will soon be offering, some nice fixed blades.
 
An option might be to put a mule into regular production with a sheath and handles. If the handles and sheaths were available for mule team people that would be a plus. The cost would be lower.
 
I would love a "regular production" mule, in VG-10 or S30V. It could be used as a benchmark for the mule program, and get the mule into more widespread use. I suspect it would fill this niche nicely...
 
The Moran in VG-10 has plenty of corrosion resistance and it's around $100. I got one lightly used on here for under $80. I highly recommend it.
