We have some extra sets of premium, exhibition grade, grade A, grade I, or what ever you want to call them, stag.
I like to think that this is the only kind of stag to use on a knife, but my opinion is .......................well, you know.

The actual dimensions, measured by me personally, are
5" long x 1-1/2" wide x 1/2" minimum in the center crown on the end.
There is a little pith, but it is hard pith and the scales are thick enough that the pith can be completely cut away.

I know, I know, it is pricey stuff. It is also really good stuff, and adds lots of value to what you are making. The more experienced makers will tell you that the REALLY good handle material adds value.
I will be putting up only 7 pair as we don't have alot of this very very good material.
