If you are just looking for scale material visit your local "antique" store. You can often find old stag handles carving sets or better yet just a fork or steel, a partial set as they tend to be even cheaper. The stag on some of these is often really nice with lots of popcorn and has the aged look that can not faked or easily duplicated. The size is normally large enough for most folders as well and also works for most fixed blades. (It is even predrilled for a tang)
Absintheur hit it on the head. i used to collect old carving sets & did well at flea markets, pawn shops, gun shows. most the time handles have little wear since these items were put away majority of time.
