If you were making a san mai kitchen knife from two carbon steels, what is the thinnest billet/stack you could start with and still expect a good outcome?
That totally depends on how you will weld up the billet.
two 1/8" sides on a 1/16" core would work for someone with experience and a good press ... others would have trouble getting two 1/4" sides and a 1/8" core to come out right.
