Sanding scales

Would someone please explain how I am to know when to change grits, moving up, e.g. 110 to 180 and especially like 400 to 600? It seems as long as you change pieces, you can just keep on sandin'. The ol' learning curve is a little steeper than I anticipated.
 
I sand at a slight angle, and change the angle a little each time I switch grits, this makes it easier to see the previous scratches.
 
you can also wipe the scales with acetone to remove the dust and get a better look to see if any scratches remain.
