The smallest size of a chef/butchers knife Sanelli calls the " Frances " , or French.
Very comfortable in hand
The steel is X60CRMOV14. I think the V is added vanadium ( edge holding) . Slightly thicker stock too,convex grind. OAL is 10-7/8" with 5-1/2" of cutting edge

16cm Flex Fillet . Fantastic all around knife for filleting,kitchen,camp,boning etc

Steel is X50CRMO14 ss convex grind ,thin stock with a little flex . They're wicked little slicers .11-5/8" OAL ,6-1/4" of cutting edge . Kydex is black w/black rivets
