This is my most popular kitchen model. I have sold over 50 of these. I only have 2 on this run, so if you want the other customized to you liking, let me know.

Santoku 5.5

1/16" AEB-L Stainless steel
Bos heat treat and cryo to 61rc
5.5" blade, 10" total
Handground ,Handrub finish
Blue g10 liners under orange g10 and a slice of deep ocean material from Tom Stone
Stainless pins holding it together
Rounded spine and choil
Add a kydex sheath for $ 30

Price - $pf plus shipping

Knife comes with warranty against defect and lifetime sharpening.

hello..question. at the heel of blade could a rounded inset be made for finger on pinch grip? and the end of the handle instead of pont be rounded. so as not to stick out as far? and handles be wood or black or brown and if any extra cost...you could pm me if you like...thanks jeff

I hope you are still making this model in a month or so. I will definitely be picking one up as soon as my knife budget recovers ;)

this looks like it would be a perfect all around prep knife.

If anyone is on the fence about this knife, perhaps my comments will help you to buy it.

I have owned one of Nick's 5.5 santoku knives for a while now and it is one of the most used knives in the kitchen because the 5.5 blade is enough for fair sized jobs but just right for smaller ones and is very nimble. Great point and blade profile. Nick makes a great kitchen knife.

I'd jump on it like a monkey on fire if it had CF scales. beautiful work and the size is perfect for the camp kitchen.
