These are factory blades. I put custom handles on them
They call this " Maple Hybrid" I have no idea how they make it up. It is stabilized
Santoku & Fruit Knife set .
Bookmatched. These are 9CR14MoV SS ,the Santoku is flat ground and the parer is a hollow grind," sabre" style.
Santoku is 10-3/4" OAL with 6" of edge
Parer is 8' with 4" of edge
