This is a prototype santoku that I just finished up. This is easily the best performing kitchen knife I have ever used due to the incredible geometry.

The blade is constructed of AEB-L steel hardened to 62 HRC. I performed all heat treating operations, including 2 cryogenic treatments. It is very easy to sharpen and takes an amazing edge!

The edge is hand sharpened to 4,000 grit on a Japanese water stone, then lightly stropped. The edge is about .010" just above the secondary bevel.

I processed a bag of onions to test the geometry/edge and it cut with minimal resistance.

The handle is constructed from textured black G10 with copper pins. Grippy, but still comfortable in the hand.

The blade features a full height flat grind and a fine hand rubbed satin finish.

This is an highly optimized slicer and I wouldn't recommend it for cutting bones, etc. However, for meats and produce, this is an absolutely amazing cutter!
