Great christmas gift, not to early to start shopping.

Santoku translates as 'three virtues' or 'three uses', a reference to the three cutting tasks the knife performs well: slicing; dicing; and mincing. The wide blade also makes moving from the cutting board to the pan easy. This is a great, lightweight kitchen utility, I have one that I use nearly every day for all my prep work.

The blade is 1 7/8 wide, 7" (sharp part) from 1/8" ATS 34 stainless, full flat grind to about 0.015 edge, with a 15 degree bevel. Professional heat treat (58 - 60 Rc).

The handle is 4 3/4" x 1 7/8" nice oval shape and easy in the hand, buffalo horn, red fiber spacers, copper spacer, and stabilized ribbon maple. The handle has a nice glimmer and shows the ribbon well.

A birch Saya (sheath) is included.

doh@! How's this feel in a more traditional pinch grip? handle doesnt look tapered near blade, how thick is the handle?
 
The handle is narrow, about 3/4 inch so it fits in your hand nicely in a pinch grip without having the taper. The neck between the blade and handle moves the handle back behind the front finger in the pinch as well letting the handle rest in your hand.
