Saturday in the Swamp=Sunday's Supper

I finished my do to list for Saturday around noon, and headed down to the camp to spend the night. Weather was suprising pleasant after the past few 105+ degree days we've had lately. I decided to do a little grocery shopping. Fishing pole-check, crawfish basket-check, frog gig-check.
Time to hit the supermarket:

We threw out a single crawfish basket and fished the rest of the afternoon.
A couple hours out netted a nice little assortment, including a fine channel cat.

After dark we headed out the "big river" where there is plenty of bank and not nearly the trees. I had no time to take pictures, busy with the swift current. Wildlife was abuntant, I can't remember ever seeing so many snakes in such a short amount of time. We saw two deer, a couple of gators and coons galore. Frogs were not very thick, we only managed to get about a dozen, however, the ones we got were monsters. We headed back after a few hours and crashed out. Dad was at the camp this morning and found the frogs in a cooler and cleaned them before I could get some pics. I'm not going to complain about that. After breakfast we ran out and got the crawfish basket to find a couple dozen nice ones in the trap. It had me wishing we had put out more. Well, I did manage a pic of the goodies of the 24 hours spent down there:

Catfish and bream fillets, whole bream, peeled crawfish tails, and frog legs.

Those frog legs are amazing ... steroids perhaps :eek::D
 
OMG! Those frog legs are meaty man! That is some good eating there I tell ya.
 
They finally found the cause of the frogs with missing and deformed legs. This caused lots of hysterical assumptions about pollution and global warming causing it. I'll see if I can find the just published info but it's a creature that gets into the legs of tadpoles and eats and causes mutations in the frog legs.
Your frog legs get me hungry just looking at them !!
 
I'd like to see pics of your stomach after eating all that, good catch you got there!
 
Looks good. I haven't eaten frog legs in several years now....Never seen anything that large before. Did you end up filleting all the sunfish or did you just cook them up cleaned and gutted like that? Never did it that 2nd way, but looking at your shots, I just might try BBQ'ing in chunks like that - works real well with the channel cats that way too!
 
Nice Catch FishShooter, Them Bull Frog Leg's are Huge ! We alway's do our Craw Dad Boil's with the Whole Critter "I've never seen them cleaned that way" That's some Good Eating there,

Hey kgd, That's how I clean my Pan Fish also Scale them take off the head & Gut's, I think Filleting them Is a waste of Good Meat, We do our BlueGill that way score them bread em & Fry em Real Tasty !

Great pictures, Fishshooter. It's obvious to me that no matter how high the groceries get, you'll eat well! Even my 15 year old daughter said she would eat those frog legs. She's carnivore and knows pretty meat when she sees it. Pretty swamp, too. Looks like some I've seen in South Carolina.

What a good take. Would you give us a brief rundown on how you're gonna cook them? Especially the frogs leggs.

All's you have to do Is Scale then, Panfish have scale's, Scale them cut off the head's & gut em and there ready to Fry ! I like to cut score line's In the fish they Cook better scored, But I score & Bread and Deep fry most of my Fish, But PanFish Cook up real Good In the Skillet ! But I like Fish Fry'ed Grilled Smoked you name It !

I filleted the bigger ones, mostly for my wife. The smaller ones I start cutting behind the head and make a line past the poop chute. All the guts come out and I pan or deep fry them whole. Old timers will remove the head and split the breast between the two front fins. There is little meat there, even on a big one, so I don't bother with it. The way I do it is very quick. I make an egg wash, dip them, salt them a bit, and bread them in a yellow corn meal and flour mix. Once fried, just pull the dorsal fin off, it is easily removed after cooking, and enjoy. You get quite a bit more meat off of one like this, especailly the smaller ones, which are my favorite.
