All's you have to do Is Scale then, Panfish have scale's, Scale them cut off the head's & gut em and there ready to Fry ! I like to cut score line's In the fish they Cook better scored, But I score & Bread and Deep fry most of my Fish, But PanFish Cook up real Good In the Skillet ! But I like Fish Fry'ed Grilled Smoked you name It !

Just like my Granddad taught me. I lived in old central California, BTW.:)
 
Nice Catch FishShooter, Them Bull Frog Leg's are Huge ! We alway's do our Craw Dad Boil's with the Whole Critter "I've never seen them cleaned that way" That's some Good Eating there,

Hey kgd, That's how I clean my Pan Fish also Scale them take off the head & Gut's, I think Filleting them Is a waste of Good Meat, We do our BlueGill that way score them bread em & Fry em Real Tasty !

Those crawfish are peeled raw, just like after they are boiled. Done this way, you can fry, saute, or add them to gumbo, stuffing, sauces, etc. Basically anything you can do with shrimp, you can do with crawfish.
 
What a good take. Would you give us a brief rundown on how you're gonna cook them? Especially the frogs leggs.

Plan was to cook it all yesterday, but it was a bit much for just the wife and I. Dad went fishing yesterday evening and is bringing his catch over tonight. We going to have a fry: fish, frogs, and crawfish will get deep fryed in an old cast iron dutch oven, along with some cut potatoes and Vidalia onioins. We will have baked beans, cheddar biscuits and cheese grits as sides. The frog legs are good suated in butter/olive oil and garlic. Catfish is excellent blackened, and good grilled or baked. I prefer the bream fried, but it's not bad done other ways, including the fillets on the grill. We'll fry the crawfish tails like popcorn shrimp tonight, but they can be prepared all kind of ways. Sometimes I like to blacken catfish fillets and make a creole cream sauce with the crawfish to go on top.
 
I've had frogs legs a bunch of times abroad but never here. I regarded them as a delicacy simply because there was never enough to constitute a proper feed. Rather like eating snails being an excuse to quaff garlic butter. Those you have there actually look like the start of a genuine nosebag. Cool.

Both bullies and pig frogs. You can't tell the difference once cleaned. The biggest are bullfrogs, though the piggys can get pretty big. I think they get so big here because this river gets warm early and stays very warm for a long time. They are a mid level predator, and I've found mice, snakes, crawfish, other frogs, small fish, and all sorts of insects in their stomachs. They are not much smaller than the pic of that African frog. Just a few will make a meal. The bigger ones have a good bit of meat on their front legs too.

:thumbup:I love fish all sorts of ways. When we gig smaller flounder (1-2 lb) out of the bay, I'll score them horizontal and vertical, making squares across them, then pan fry them. The bigger ones get filleted or stuffed with a shrimp or bay scallop stuffing. But that's another post-the wife and I are going snorkeling next Wednesday for scallops, and flounder gigging that weekend.:)
 
My Grandma, rest her soul, grew up in the Dirty 30's in Kansas. Times were tough, so they ate what they could. One of the things she grew up on she would make for us when I was a little kid. She would skillet fry the catfish, but keep the fins and bake them in the oven with a BBQ rub she made. They were like eating crunchy, fishy chips; we loved 'em.
 
That African frog is a big one. Can you eat all frogs In the USA or there are some frogs you better stay away from??? How small is too small to bother with?? I had frog legs before and liked it.. I wonder if there are any in SO CALI to do my own catching.

Without a direct brain shot, no way. These things are incredibly tough. Three or four 1/8 inch prongs though them won't kill them. They live for hours even when cut in half. I smash their heads in before cleaning them because they will live though being skinned and having their legs removed. A .22LR hollow point smacks them pretty good, you can hunt them with one during the day, and is pretty effective. However, a solid bullet from a .22 rifle usually won't stop them from getting away. A pellet gun probably wouldn't disable a big one long enough to get a hold of him. Gigging is the best way, but you can get close enough to grab them by hand, providing you have a light on them and are somewhat stealthy, not making any sudden noises. Even a simple fire hardened wood spear, with a barb notched in it, would be suffecient to harvest them.

What did you use for smashing their heads ? Is it better than chopping them ?
Maybe a sling shot loaded with a big ball bearing or steel nut would be a descent way for hunting them ? Of course with headshots :)
 
I have a little ball peen hammer that I keep at the fish cleaning sink at the camp. I use it on really big catfish also. Their skulls aren't thick, so a good whack on the lid of the ice chest will usually do it too. I think a slingshot with a good chunk of ammo would do better than a pellet gun. I'm not good enough to try it though. :)

I got ya, I just never seen them done thay way "We alway's have Big CrawDad Boils with the Crab Boil Seasoning that Is Good Eating, We have some Big Craw Dad's In Nebraska, Out In Western Nebraska they have 4' Deep erigation Canal's everywhere and then CrawDad's In them Canal's are almost as big as Rock Lobster's "I've seen them 6" & 7"'s long !

Your making me Hungry ! When I was down In Texas along the Gulf of Mexico In the Bay's by Galveston Island that's the first time I ever seen people Spear fishing for Flounder, They was out there In the shallow Bay's walking around at Night holding lantern's and spearing Flounder, That Is some Good Eating that and Red Fish & Speckeled Trout, Fishing like that was all new to me "I'm From Nebraska"

I like going out during the Day and useing a Fishing Pole with a small Hook on the line and a little piece of Red Cloth on It and look out ! You Hook In to them Big Bull Frog's "It's a Blast" and they are a vorasious Predator they eat anything that move's,
