scary sharp knives

Hate to sound like a fan boy, but my Spyderco Civilian came so scarey sharp I was always nervous around it.

The only other knife that I've owned that made me feel like that was a double sided japanese style dagger from Mr. Bill Seigle (sp maybe).

That one bite me but good when I wasn't paying attention :D
 
I keep my knives hair popping sharp, but a couple stand out from the bunch. One was a knife I made early in my knifemaking days that I heat treated with a torch using only a magnet as a guide for 'soaking temp'. The other is a Schrade fixed blade- old timer deer slayer, it has good edge geometry and must have a good steel.
 
I just got a Matt Lamey that's real sharp.

I'm impressed with the edges on all the production knives previously mentioned.

And my Phil Wilson Knives are great cutters even when they are not so sharp!
 
I will second the opinion that Jimmy Fikes and Shiva Ki make knives that are 'tree top' sharp (cuts hair off your arm without touching the skin), and will hold an edge under lots of hard use. RJ Martin is another maker whose knives are both very sharp and hold up under use.

Its pretty easy to make a knive scalpel sharp, but they usually stay sharp only as long as that scalpel would, a bad thing for knives.
Usually being the operative word......I'm talking about the ones that are that come that sharp and stay that sharp. Benchmade folders come from the factory very sharp but you had better take them up on the "lifetime sharpening" guarantee if you want it to stay that way.
