Lately I've noticed that there aren't a lot of Sebenza's for sale or trade in the exchange forums. Do you think this is due to the change in format of the exchange forums or do you think that members are now appreciating the Sebbie's even more and holding on to them.

It is my guess that the sale of Sebenzas is a bit cyclical, with fat and lean times. I also think it very possible that some of the people who might want to sell one haven't paid the freight.
Have you checked the sale forum at Knife Forums? If that is dead too, then I'd say we've just hit a dry spell.
