When a knife becomes discontinued, how long after with they stop servicing it? Is there a magic number of years before they stop receiving older models to service or does it depend solely on remaining number of parts in stock? Just curious so I'll know what will be the last date I could send in a discontinued knife.

No such thing.

If the knife can not be repaired; their warranty would be to give you a replacement (assuming no willful Vivi-like destruction of the knife). Since a discontinued knife would no longer have replacement models or parts in stock, they normally provide a coupon of equivalent value to obtain a new knife of your choice in the store.

If by service you mean just sharpening and that sort of thing; they will honor that all long as your knife is safe to use.
