Here's another Sharpmaker vote. I resisted at first and bought some honed from Razor Edge Systems because I wanted to maintain my freehand sharpening skills, which are OK. Those worked great, but the Sharpmaker is so much faster and easier.
Personally, I want something I can take out of the kitchen tool drawer, put a shaving edge on a knife or two, and put away in 10 minutes or so. I can do that easily with a Sharpmaker. Maybe I could do it freehand, but I have to slow down to maintain a consistent angle. Can you do that with an Edge Pro or the like?
