Sharpener

They are a really great setup for te price point. I hate to admit it but I still haven't reached the point that I can get something as sharp on the EP as I can with the diafolds and aligner. :\
 
Keep practicing, that EP is capable of an edge that will make you shiver. Bearing in mind that you're going to need to work with the edge a bit to notice the difference, the Diafolds will leave a toothier edge that will break down faster than the high-polish one that the EP makes. The slightly rougher edge will "feel" sharper on your finger, though, and will shave and slice paper very well, just won't last as long. If you don't mind sharpening fairly often, that kind of performance can be very good and very quick! Personally, I polish mine a bit more, except kitchen slicers, which stay a slight bit on the toothier side (600 finish, instead of 8K)
