I need advice on the best knife sharpeners
commercially available; any recommendations
on the best devices out there to sharpen fixed blades and folders with plain edges
(no serrations) would be appreciated

Spyderco Sharpmaker 204... DEFINITELY!

Once you're adept to that, you can proceed to practicing freehand sharpening, still the best way to go afterwards.

If you have very dull knives I would suggest using a 'fine' diamond bench hone from DMT. It gives you a very efficient cutting edge and can remove a lot of material if necessary.

If you just want the best available sharpener on the market just get an Edge Pro either the Apex @$125 or the Pro @$275. Both do the same job, the Pro is just built better.
If you only sharpen knives every month or so then another may suit you better....however, if you want the best the Edge Pro is the way to go IMHO! It is so simple to use and you put a perfect edge on every time at whatever degree angle you want to.
