Sharpening a convexed Dogfather CG

Its pretty sharp still, but what grit sand paper should i use when it gets dull? What girt should i use when its not to dull not to sharp? What girt should i use when its sharp but i want it hair popping sharp? I know its a lot of questions, but when these are answered i really think ill get convex sharpening down!

I generally start with 320 grit, then 1000, then 2000. But that's when it's really dull. Usually it just needs a good strop with green compound.
 
Not letting it get dull is the first step, picking the grit to sharpen with depends on how dull the knife is. If the knife is sharp but not sharp enough to shave I would start with 1000 or 2000 then strop. If it can shave but you know its been sharper, a little stropping usually will fix it. If the edge has any nicks or flat spots I would start at 800 or less( this may also depend on how hard the steel is too) but that's more like a full re-sharpening. I like to use a barber strop to finish and touch-up my convex edges, its easier to follow the angle.
