Sharpening a Wustoff Carving knife

I need to sharpen an older carving knife and need to know what would be the best angle to use. I have a Sharpmaker and a Lansky basic system. I really like the Sharpmaker but is 30 degrees realle a good angle for a thin carving knife?

My Henckels do best at 40 degrees. They don't have enough starch for 30 degrees.
