Sharpening an Opinel with sandpaper like a convex grind?

its the only way i do it.

start with a pretty course grit like 400, the opinel edges are weird in my experience and need to be started over.

i tip up the spine of the knife a bit to form a slight convex bevel instead of doing a 100% full convex. still a very thin edge.

The Opinels I've bought have been full convex but came dull. I agree wityh siguy that they need a little work to initially put an edge on them.

I used to use sandpaper on a mouspad to sharpen them and it worked fine. Now I sharpen them with a slightly slack 9 micron belt followed by stropping with chromium oxide.

I'm carrying a No. 4 right now. Talk about thin!

Yes that's the way I sharpen them now wasn't until I was fooling around with sandpaper one day, that WOW! they came out like razor blades.

The first thing I noticed about my Opinel was how easy it
was to make it scary sharp with a stone, Then I tried a
convex edge , just as sharp but way easier.
