Now I've never sharpened a blade that had no bevel. When I sharpen a factory knife it's until I get a burr on the opposite side, then I switch sides. Is it the same when establishing a bevel on an unsharpened blade?
Keep the apex of your edge on center. As it comes to an apex a burr will form on one side. Do the other side and form a burr. Then step up the grit finer and finer working the burr on both sides until you get where you want and strop off the burr.
