Sharpening Question

I have managed to aquire almost the entire Busse custom line. All of them with symetrical edges. I own quite a few quality sharpening devices, but my favorite is the Spyderco sharpmaker. So what do you think? should I take my symetrical knives to the white rods?
 
Following the directions that come with the Sharpmaker will remove the dual grind. To keep it just use the Sharpmaker on the flat part of the bevel and strop the edge if you have done heavy metal removal and need to eliminate the burr.

So what you are saying is that with Busse SYMETRICAL edges you still strop the edge wether it is stone or leather. Away from the sharpener not towards the sharpener. Right? Sorry I'm a little slow, nice guy but slow.

Copis, the reason you stroke edge trailing on a strop is that if you do it the other way the blade will cut into the leather. It is simply the only way to do it. Convex edges are always honed edge trailing as they are sharpened on such equipment. However for flat ground edges you can go either way on rods or benchstones.

Now which do you do? It depends on what you are trying to achieve. If you hone edge trailing you will align the edge and remove some metal. If you hone edge into the stone you will remove metal much faster and do no alignment. On ceramic rods I go edge trailing as I want to align the edge. On benchstones I go into the stone as I want to remove metal.

I should note there is one exception to honing convex bevels edge trailing. If you are very skilled you can sharpen a convex bevel on an ordinary benchstone by rotating the blade as you stroke into the stone. You have to match your rotation to the curvature of the bevel. I cannot do this but have seen it done.

Thanks so much for the info! It all makes sense. Many years ago I ruined many good knives that belonged to my patient dad. One thing I did learn is how to give knives a scary edge. If the geometry is there and the steel is good, I can make it scary sharp. But I always sharpened towards the edge....Your guidance is greatly appreciated! Thanks

May I awake this thread again: How to sharpen Busse blades with symetrical edge? I have BA3 with symetrical edge and it just does not want to shave hair even after I tried to sharpen it on both Spyderco Sharpmaker and Gatco Tri-Seps (thank you, Cliff, for advice on sharpening using Tri-Seps, I sharpen all my knives on it now, except BA3 does not want to...)
