Hey Mag - Your original post was excellent, very well said. I was about to post something but saw a better post than mine, namely yours. so I decided not to pile-on.Sigh... never mind.
RichardJ is highly respected around here for his sharpening skills and being a nice guy! There are plenty of Richard's loyal customers & supporters around here too. When a person asking/looking for sharpening skills, please be respectful and not push for a sharpening service.
OP - It's not that hard to do what in the video posted above. Practice sharpening on a cheap kitchen knife using whatever abrasive medium. There will be techniques attain by practices and practical/emperical results. Once you put some thinking into why it works, you attain skills which can be apply in wider sharpening scenarios/settings. With a little attention at the video, he deburr & micro-bevel angle at least 10* (inclusive) higher using brick than beveling with concrete.
btw - a couple months back, Mag also posted on video demonstrate using concrete block to sharpen knives.
