I set my edge bevels with a clean fine (A45 or A30 trizact) belt and finish sharpening on diamond "stones" (600 and 1200 grit). If I'm really feeling frisky I may use finer grit sandpaper. A quick strop and boom, ready to go.
I simply angle my platen at 19 - 20 degrees off of vertical and then draw the edge across the belt with the knife in a vertical orientation. I hope this makes sense.
I have a belt grinder, and I tend to rough sharpen using Norton ceramic belts in 240grit and the cork/silicon carbide belts up to 600 grit, then go to hand sharpening with water stones, DMT files, or abrasive paper.
